IDLI MASALA

I was always a picky kid when it came to food. I was very choosey about what I would and wouldn’t eat and Idlis always topped my list of “The Most Dreaded Breakfasts”! My mother would always find means to stuff me with idlis and I would always find my means to dodge and get away. So, one fine day she decided to turn this around and said she had a surprise snack waiting for me. Without even the slightest inkling of what it was made of, I thoroughly relished my spicy surprise. Only once I put my bowl down my mother announced to me that she made it with the leftover idlis. This has been my hot favourite snack ever since. So here is how the boring idlis got a spicy makeover....

 

Ingredients:

3-4 Leftover idlis – cut into cubes or crushed

1Chilli – chopped

1 Carrot – chopped

1 Onion - chopped

1 Capsicum – chopped

½ teaspoon Cumin seeds

1 teaspoon ginger garlic paste

1/2 teaspoon Turmeric powder, Sambar powder and Chilli powder

 

Method:

  • Heat some oil in a pan or kadai on medium flame and add cumin seeds

  • As the seeds begin to splutter, add some ginger garlic paste to the oil and mix well so that it doesn’t stick to the pan

  • Add all the chopped vegetables and stir fry till they turn golden brown

  • Add the turmeric powder, sambar powder and chilli powder to the cooking vegetables

  • Add the idli cubes to the pan and mix well

  • Garnish with coriander or curry leaves and serve hot

 

*Tip*

Idli masala can yet be revamped by adding or substituting with vegetables like beetroot to give it a different colour and flavour
